Cacao Banana Mousse

A simple, deeply satisfying dessert made with ripe bananas, raw cashews, and rich cacao. This naturally sweet mousse is creamy, nourishing, and best enjoyed well chilled.

Ingredients

  • 2 extra-ripe bananas

  • 3 cups raw cashews

  • 6–8 tablespoons cacao powder (to taste)

  • 3 cups non-dairy milk of choice

  • A dash of vanilla

  • A pinch of cinnamon

Instructions

  1. Add all ingredients to a high-speed blender, such as a Vitamix.

  2. Blend on high until completely smooth and creamy, about 4–5 minutes. Pause as needed to scrape down the sides to ensure an even texture.

  3. Transfer the mousse to a covered container and refrigerate for at least 4 hours, allowing it to fully set.

To Serve & Store

Serve chilled on its own, or topped with fresh berries, shaved dark chocolate, or a sprinkle of cacao nibs. Store in the refrigerator for up to 3–4 days. The texture will continue to thicken slightly as it chills.
