Golden Berry Sunshine Bites are bright, naturally sweet little snacks made from simple, nourishing ingredients. Ingredients

  • 12 dates, pitted

  • 2 cups raw almonds

  • ¼ cup golden berries

  • ½ cup unsweetened desiccated coconut

  • 1 teaspoon vanilla

  • ½ teaspoon sea salt

Instructions

1. Blend
Add the dates, almonds, golden berries, coconut, vanilla, and sea salt to a food processor. Blend until the mixture is well combined and crumbly but sticks together easily when pressed.

2. Roll
Transfer the mixture to a large bowl. Roll into bite-sized balls—about 1 inch in diameter works well, but you can make them any size you like.

3. Store
Store the Sunshine Bites in the refrigerator until ready to enjoy.

Yield: About 24 one-inch bites.
